02 - 1/2 medium onion, chopped tiny
03 - 1 lb lean ground beef

04 - 1 tbsp chili powder
05 - 1/2 tsp garlic powder
06 - 1/2 tsp cumin powder

→ Casserole Ingredients

07 - 1 (15.5 oz) jar of salsa
08 - 2 cups shredded cheddar or a Mexican cheese mix, split in half
09 - 2 cups Nacho Cheese Doritos, crushed small
10 - 1 (12 oz) can of sweet corn, drained
11 - 1 (14 oz) can of black beans, rinsed and drained

→ Optional Toppings

12 - Choose from: fresh cilantro, sour cream, scallions, black olives, avocado, diced tomatoes, shredded lettuce

# Instructions:

01 - Turn the oven to 350°F and put the rack in the center spot.
02 - On medium heat, warm oil in a large pan, then crumble the beef in as it cooks—about 5 minutes. Toss in the chopped onions and mix in the spices, letting that cook another 5 minutes.
03 - Take your 9x13 baking pan and cover the bottom with crushed Doritos.
04 - Once the meat is cooked and drained, stir in salsa, corn, black beans, and half the cheese until blended well. Flatten this beef mix over the Doritos in the pan.
05 - Top it off with the rest of the cheese and bake uncovered for 15-20 minutes, or until the cheese is melted and bubbly. Add the toppings you love and serve warm.
