Soft Pretzel Bites (Print Version)

# Ingredients:

→ Dough Base

01 - 1 tablespoon of brown sugar
02 - 4½ cups of all-purpose flour (plus extra if the dough is sticky)
03 - A package of active dry yeast (0.25 ounces)
04 - 110-115°F warm milk or water (1½ cups)
05 - 1 teaspoon of fine sea salt
06 - 2 tablespoons melted butter (plus extra for brushing)

→ Boiling Solution

07 - ⅓ cup of baking soda
08 - 9 cups of water

→ Topping

09 - Whisked large egg with 1 tablespoon water
10 - Coarse sea salt or pretzel salt for sprinkling

# Instructions:

01 - In a large bowl, stir together warm milk and sugar, sprinkle yeast, and wait 5 minutes until foamy
02 - Mix in flour, salt, and butter. If kneading by hand, do so for 4 minutes, or use a dough hook to form a smooth dough. Dust with more flour if sticky
03 - Cover dough in an oiled bowl with a damp towel, let it puff up for 20-30 minutes until it doubles in size
04 - Preheat the oven to 450°F, line pans with parchment, and prepare the boiling solution by mixing water and baking soda
05 - Divide dough into 12 portions, stretch into ¾-inch ropes, and slice into 1-inch chunks
06 - Drop dough bites into the boiling solution for 30 seconds each, then place them on your parchment-lined pans
07 - Brush dough bites with egg wash, sprinkle with salt, and bake for 12-14 minutes until golden brown
08 - Brush freshly baked pretzels with extra butter if you like, and enjoy warm

01 - Tastes best freshly baked and still warm
02 - You can use either milk or water for the dough
03 - Brush with extra butter after baking for extra flavor
04 - You can knead the dough by hand or let a mixer do the work
