Mango Chili Dressing (Print Version)

# Ingredients:

→ Fruit & Juices

01 - The juice from two medium limes, about 1/4 cup
02 - Peel one large mango, remove its seed, and chop into thick pieces
03 - 1/4 cup of orange juice freshly squeezed

→ Seasonings & Aromatics

04 - 1 clove of garlic, whole
05 - 1/4 teaspoon of black pepper, freshly cracked
06 - 1/2 teaspoon of salt
07 - 2 tablespoons of honey, sweet as can be
08 - 1/2 teaspoon ground cumin spice

→ Fresh Ingredients

09 - 1 tablespoon of minced chili pepper with medium heat, like a jalapeño or Fresno
10 - 2 tablespoons of finely chopped fresh cilantro

→ Oil

11 - 1/3 cup of good-quality extra virgin olive oil

# Instructions:

01 - Toss the lime and orange juices, honey, cumin, garlic clove, salt, and mango pieces into a blender. Run it at medium speed until the mix is completely smooth. Pour it all into a jar.
02 - Pour the olive oil into the jar very slowly while you mix it constantly with a whisk or fork. Keep stirring as you pour.
03 - Add the chopped cilantro, minced chili, and black pepper to the jar. Taste it. If it feels like it’s missing salt, sprinkle in a bit more.
04 - Pop it into the fridge where it’ll stay good for about a week. Before using, shake it up well.

# Notes:

01 - Great for dressing salads or pairing with grilled chicken, shrimp, or salmon
02 - Keeps nicely in the fridge for about seven days
03 - Always shake it up before serving
