Garlic Mushroom Pasta (Print Version)

# Ingredients:

→ Base

01 - 1/2 medium onion, diced
02 - 3 tablespoons butter, split up
03 - 4 ounces dry pasta
04 - 8 ounces cremini mushrooms, cut into slices
05 - 1 tablespoon olive oil
06 - 1/2 teaspoon Dijon mustard
07 - 3 garlic cloves, finely chopped

→ Sauce

08 - 1/4 cup broth (chicken, veggie, or even wine)
09 - Zest from half a lemon
10 - A pinch of salt and pepper
11 - 1/2 teaspoon fresh lemon juice
12 - 2 tablespoons parsley, freshly chopped
13 - 1/2 cup parmesan, grated fresh

# Instructions:

01 - In salty water, boil pasta until it's just about firm but not too soft.
02 - In a skillet, use butter and oil to cook onions and mushrooms for 8-10 minutes until they're golden.
03 - Mix garlic, Dijon, and the rest of the butter into the pan. Let it go for about a minute.
04 - Pour in lemon and broth, then let it bubble gently for around a minute.
05 - Take it off the heat, mix in parsley, parmesan, and some pasta water. Stir together with the pasta.

# Notes:

01 - You can double it, but searing the mushrooms might take extra time.
02 - Feeds 2 as the main event, or 4 if it's part of a bigger meal.
