Boursin Chicken Meal (Print Version)

# Ingredients:

01 - 1 tablespoon of avocado oil.
02 - 4 boneless, skinless chicken breasts, thinly sliced.
03 - 1/2 teaspoon black pepper, or as needed.
04 - 1/2 teaspoon dried parsley flakes.
05 - 1/2 teaspoon dried oregano.
06 - 1/2 teaspoon of garlic powder.
07 - 1/2 teaspoon of salt (split).
08 - 1/2 teaspoon mustard powder.
09 - 2 tablespoons of butter.
10 - 1 small shallot, chopped fine.
11 - 1 minced garlic clove.
12 - 1/4 cup of dry white wine.
13 - 1 cup of chicken stock.
14 - 5.2 ounces of softened Boursin cheese.
15 - 1/2 cup of half-and-half cream.
16 - 1/3 cup of parmesan cheese, shredded.
17 - A couple of fresh thyme sprigs.
18 - 2 teaspoons of parsley (dried).

# Instructions:

01 - Sprinkle the chicken breasts with mustard, oregano, parsley, garlic powder, and half of the salt. Add pepper to taste.
02 - Warm up the avocado oil in a big skillet over medium-high heat. Sear the chicken on both sides, about 3-5 minutes each, until cooked. Set aside on a plate.
03 - Use the same pan to melt butter. Cook the garlic and shallots until soft and see-through, around 3 minutes. Pour in the wine and stir up all the stuck bits from the pan. Let it reduce by half.
04 - Mix in chicken broth and melt the Boursin cheese. Stir until the sauce gets creamy and thick. Add the parmesan, dried parsley, thyme, and half-and-half. Let it cook for about 5 minutes.
05 - Place the chicken back into the skillet, letting it heat up in the sauce. Add extra salt or pepper if needed.

01 - This sauce is also awesome on fish or steak.
02 - Pick a dry white wine you'd want to drink on its own.
