Zesty Chicken Lime (Print Version)

# Ingredients:

→ Seasonings & Chicken

01 - 2 large chicken breasts (about 1 to 1.2 pounds)
02 - 1 tablespoon of olive oil
03 - Half a teaspoon of cumin
04 - Half a teaspoon of paprika
05 - A quarter teaspoon of fine salt
06 - A quarter teaspoon of ground black pepper

→ Lime-Chili Marinade

07 - 1/4 cup of olive oil
08 - 1/2 cup cilantro, chopped up
09 - Juice from 1 lime (freshly squeezed)
10 - 1 tablespoon of honey
11 - 2 cloves of garlic, minced finely
12 - 1/2 teaspoon red chili flakes
13 - 1 fresh chili pepper, sliced thin
14 - A small pinch of salt

# Instructions:

01 - Stir together everything for the marinade in a mixing bowl until blended well.
02 - Cut chicken breasts lengthwise first, then into smaller chunks. In another large bowl, toss chicken with some olive oil, spices, and 1 tablespoon of the marinade.
03 - Warm a skillet on medium heat with a little olive oil. Cook chicken pieces for about 10 to 12 minutes, flipping them halfway. Near the end, drizzle some marinade over the pieces.
04 - Move the cooked chicken to a plate and pour the leftover marinade on top.

# Notes:

01 - Let the chicken sit in the marinade beforehand or cook it right away.
02 - Great for serving in tacos, topping salads, or as your main meal.
03 - Use more or less chili depending on how spicy you want it.
