Velvet Strawberry Cheesecake (Print Version)

# Ingredients:

→ Cake Base

01 - 1 cup vegetable oil
02 - 1 teaspoon white vinegar
03 - 2 large eggs, room temperature
04 - 1/2 teaspoon salt
05 - 1 tablespoon cocoa powder
06 - 1 teaspoon vanilla extract
07 - 1/2 cups all-purpose flour
08 - 1 cup granulated sugar
09 - 1 teaspoon baking powder
10 - 1 teaspoon baking soda
11 - 1 cup buttermilk, room temperature
12 - 2 tablespoons red food coloring

→ Cheesecake Filling

13 - 16 oz cream cheese, softened
14 - 1 cup heavy whipping cream
15 - 1 teaspoon vanilla extract
16 - 1 cup powdered sugar
17 - 1 cup fresh strawberries, pureed

→ Topping

18 - Fresh strawberries, halved
19 - Whipped cream

# Instructions:

01 - Set oven to 350°F and get your 9-inch springform pan ready by greasing and lining it.
02 - Combine flour, baking soda, sugar, baking powder, cocoa, and salt by sifting them together.
03 - In a bowl, whisk together the oil, eggs, buttermilk, food coloring, vinegar, and vanilla. Slowly mix with the dry ingredients until smooth.
04 - Transfer the batter to your pan and bake for 25–30 minutes, or until fully cooked. Let cool down completely afterward.
05 - Blend cream cheese until smooth, adding powdered sugar and vanilla little by little. Gently mix in pureed strawberries, then fold in whipped cream.
06 - Spread filling across the cooled cake and chill for at least 4 hours. Add halved strawberries and whipped cream right before serving.

# Notes:

01 - Chill the cake for 4 hours minimum before you slice it.
02 - Make sure all the ingredients are at room temperature so they mix smoothly.
