Crispy Sweet Potato Fries (Print Version)

01 - 2 tablespoons of high-quality olive oil
02 - 2 medium-sized sweet potatoes, optionally peeled, then sliced into even 1/4-inch sticks
03 - 1 teaspoon smoky paprika for a deeper flavor, or regular paprika works too
04 - 1 teaspoon of garlic powder
05 - 1/2 teaspoon of freshly cracked black pepper
06 - 1 teaspoon of fine sea salt

07 - 1 tablespoon of cornstarch for that perfect crunch

# Instructions:

01 - Heat up your oven to 425°F (or 220°C). A tip? Stick the baking sheet in while it warms up. It helps get a nice crispy texture!
02 - If you'd like, peel the sweet potatoes first. Then slice them into even 1/4-inch sticks. Keeping them the same size? That's how you get even cooking!
03 - Drop the sliced fries into a bowl of cold water for half an hour. This washes off some starch and makes them crispier.
04 - After drying the fries really well, toss them with your olive oil and the mix of salt, paprika, garlic powder, and pepper. If you want them crispier, this is when you throw in that cornstarch too!
05 - Carefully pull the heated baking sheet out of the oven. Lay the fries on it in a single layer—don’t crowd them! Bake for 25-30 minutes, flipping halfway, until they’re perfectly golden and crispy.
06 - Once they’re just right—crispy and golden—take them out. Letting them cool a few minutes is a good idea if you can hold off.

01 - They’re at their absolute best when served hot and crispy.
02 - Add cornstarch to make them extra crispy on the outside while keeping the inside soft!
03 - Give the fries plenty of space on the baking sheet. When they’re too close, they steam instead of crisp.
