Strawberry Cheesecake Cookies (Print Version)

# Ingredients:

→ Cookie Dough

01 - ½ cup butter at room temperature
02 - ½ cup white sugar
03 - ½ cup packed brown sugar
04 - 1 teaspoon vanilla
05 - 1 large egg
06 - 1¾ cups plain flour
07 - ¼ teaspoon baking powder
08 - ½ teaspoon baking soda
09 - ¼ teaspoon regular salt
10 - ½ cup crushed dried strawberries

→ Filling

11 - 4 ounces soft cream cheese
12 - 2 tablespoons white sugar
13 - 1 teaspoon vanilla
14 - ¼ cup strawberry jam or puree

# Instructions:

01 - Mix together cream cheese, jam, vanilla, and sugar until it’s smooth. Pop it in the fridge to chill.
02 - Blend butter with both sugars. Stir in the egg followed by vanilla. Mix in the dry stuff and crushed strawberries. Let it sit in the fridge for 30 minutes.
03 - Take a tablespoon of dough, flatten it, add some filling, then cover with another dough tablespoon. Pinch the sides to seal and roll into a ball.
04 - Cook in a 350°F oven for about 12-15 minutes, until they’re just golden on top.

# Notes:

01 - Keep in fridge for up to 5 days or freeze for 2 months.
02 - Dough can sit in the fridge overnight if needed.
