Spicy Shrimp Sushi (Print Version)

# Ingredients:

→ Shrimp

01 - Clean shrimp (1 pound), shells removed
02 - Mayo (1/3 cup)
03 - Sweet chili sauce (2 tablespoons)
04 - Sriracha hot sauce (2 teaspoons)
05 - Half a lime worth of juice
06 - A small pinch of salt

→ Sushi Rice

07 - Short-grain rice for sushi (2 cups)
08 - 2 cups water for cooking the rice
09 - 3 tablespoons sweet mirin (rice wine)
10 - A couple teaspoons of sugar
11 - A tiny bit (3/4 teaspoon) of salt

→ Assembly

12 - Shelled edamame (1 cup)
13 - Cucumber, thinly cut
14 - Half a bunch of green onions, finely chopped
15 - Carrot, shredded into thin strips
16 - Avocado, diced into cubes (1 whole)
17 - Sesame seeds
18 - Crunchy topping (onions)
19 - Some peanuts, ground up

# Instructions:

01 - Mix the sweet chili sauce, mayo, lime juice, sriracha, and a dash of salt in a bowl. Set it aside for later.
02 - Toss the shrimp into a pot of boiling water for 60 seconds or until done. Drain, let them cool, then chop into small pieces. Stir half the sauce through the shrimp.
03 - Rinse rice a few times till the water turns clear. Cook for 15 minutes, leave covered for 10 minutes to steam. Combine warmed mirin, sugar, and salt, and gently fold it through the warm rice.
04 - Mix cucumbers with a spoon of mirin. Drizzle edamame with sesame oil and sprinkle with salt. Dice green onions and shred carrots finely.
05 - Spoon rice into bowls, then layer with shrimp, avocado chunks, veggies, sesame seeds, peanuts, crispy onion bits, and the leftover sauce on top.
