Protein Cookie Dough Bites (Print Version)

# Ingredients:

→ Base Ingredients

01 - 1 1/2 cups almond flour (or heat-treated all-purpose flour)
02 - 1 cup low-fat cottage cheese
03 - 1 teaspoon vanilla essence
04 - 2 tablespoons of maple syrup without sugar (like Lakanto)

→ Protein & Coating

05 - 1 teaspoon coconut oil
06 - 1/4 cup vanilla-flavored protein powder (or another flavor you like)
07 - 1 1/2 cups sugar-free dark chocolate chips (divided, like Lily's)

# Instructions:

01 - Put the cottage cheese in a blender or processor and mix until it’s totally creamy.
02 - Save 1 cup of chocolate chips for later. In a mixing bowl, stir the blended cottage cheese with everything else until combined.
03 - Stick the mixture in the fridge for 30 minutes to help it firm up.
04 - Cover a baking tray with parchment. Scoop out portions of the cold dough, roll them into balls, and place them on the tray. Freeze for at least 20 minutes.
05 - Microwave the leftover chocolate chips in short 15-second bursts, stirring after each, until melted. Coat each frozen ball by dipping it in the chocolate, then set them back on the tray. Chill in the fridge until the chocolate hardens.

01 - If you’re using all-purpose flour, you’ll need to heat it first to make it safe to eat.
02 - Feel free to try out other protein powder flavors for variety.
