Skillet Cranberry Chicken (Print Version)

# Ingredients:

01 - 5-6 chicken thighs, with skin and bones left on.
02 - 1 tablespoon of oil, olive works best.
03 - 1/2 teaspoon each of salt and black pepper.
04 - 2 garlic cloves, chopped finely.
05 - 1 large shallot, diced, about one-third of a cup.
06 - 2/3 cup of freshly squeezed orange juice.
07 - 1 cup of chicken broth.
08 - 1 tablespoon of grated orange peel.
09 - 1 1/2 tablespoons of honey.
10 - 1 tablespoon cider vinegar.
11 - 1 cup of cranberries, plus a couple of tablespoons more for topping.
12 - Half an orange, cut into thin slices.

# Instructions:

01 - Preheat your oven to 400°F. Sprinkle chicken generously with salt and pepper.
02 - Heat oil in your skillet and cook the chicken for about 4-5 minutes on each side until it looks golden. Take it out and set it aside.
03 - Sauté garlic and shallot in the same skillet for 4-5 minutes. Stir in honey, liquids, and cranberries. Let it simmer for 8-10 minutes until it thickens a bit.
04 - Put the chicken back in the skillet along with the extra cranberries and orange slices. Toss it into the oven and bake for 15-20 minutes until the chicken hits 165°F inside.

# Notes:

01 - A pan that can go in the oven is a must.
02 - Fresh cranberries give the best results.
03 - Swap honey for maple syrup if you prefer.
