Marry Me Ditalini Pasta (Print Version)

# Ingredients:

01 - 8 oz. ditalini pasta.
02 - 1-2 tbsp avocado oil.
03 - Half a pound of ground mild Italian sausage.
04 - 1/2 cup finely chopped sweet onion.
05 - 2 minced garlic cloves.
06 - 1-1.5 tbsp of tomato paste.
07 - A pinch of kosher salt, or as much as you'd like.
08 - As much black pepper as you like.
09 - 1/2-3/4 cup chicken broth that's low in salt.
10 - 3/4-1 cup heavy whipping cream.
11 - 1/2 cup grated parmesan.
12 - Red pepper flakes to sprinkle on top.

# Instructions:

01 - Boil ditalini in salted water until it's just tender. Drain it, mix with a bit of oil, and leave it aside.
02 - Over medium-high heat, brown the sausage in oil. Toss in garlic and onion, cooking until the onion softens.
03 - Add tomato paste, letting it cook until a bit caramelized, about 2-3 minutes. Season with salt and pepper, pour in broth, and simmer until reduced by half.
04 - Mix in heavy cream and parmesan. Lower the heat, then stir until the cheese melts smoothly into the sauce.
05 - Toss the pasta into the sauce, stirring to coat evenly. Finish with red pepper flakes on top.

# Notes:

01 - You can add more broth if the sauce feels too thick.
02 - Cooking pasta al dente gives the best bite.
03 - Cooking tomato paste a little longer brings out a richer taste.
