Beef Tenderloin Roast (Print Version)

# Ingredients:

01 - 4 to 4 1/2-pound beef tenderloin roast, center-cut, tied and trimmed.
02 - 1 tsp freshly cracked black pepper.
03 - 2 tsp kosher salt.
04 - 6 minced garlic cloves.
05 - 6 tbsp butter, softened.
06 - 2 tbsp avocado oil.
07 - 1 tsp finely chopped fresh thyme leaves.
08 - 1 tsp rosemary leaves, chopped small.

# Instructions:

01 - Let the meat sit out for 1-2 hours to warm up. Stir together the butter, chopped herbs, and garlic.
02 - Set oven to 425°F to preheat. Dry the meat thoroughly, then sprinkle it with salt and pepper.
03 - In hot avocado oil, sear all sides of the meat until browned all over — about 10 minutes.
04 - Generously coat the top of the tenderloin with the butter and herb mix.
05 - Pop it into the oven and cook for about 15–20 minutes, depending on how done you want it.
06 - Let it rest for 10–15 minutes. Remove the twine, slice it up, and serve.

01 - A thermometer makes it easier to get the right doneness.
02 - Tastes great with a side of horseradish sauce.
