Garlicky Mushrooms Spinach (Print Version)

# Ingredients:

01 - Packed fresh spinach, 4 cups
02 - 1 pound of mixed, cremini, or button mushrooms—slice them up
03 - 2 tablespoons of olive oil
04 - 4 minced cloves of fresh garlic
05 - 1 tablespoon of freshly squeezed lemon juice
06 - Salt and black pepper—adjust as needed

07 - Chopped fresh parsley
08 - A pinch of red pepper flakes

# Instructions:

01 - Rinse your mushrooms well and dry them off with a towel. Slice them into similar-sized pieces for even cooking. Wash and set aside your spinach. Mince the garlic while also squeezing some lemon juice to have it ready.
02 - Place a large skillet on medium heat and pour in the olive oil to get it ready for the mushrooms.
03 - Toss your sliced mushrooms into the skillet. Give them 5-7 minutes, stirring here and there. Let them turn golden and soft.
04 - Once the mushrooms are nearly done, stir in the minced garlic. Let it cook for a short 1-2 minutes while stirring, so it releases its smell but doesn't burn.
05 - Throw the fresh spinach into the skillet and mix it gently with the mushrooms and garlic. Season with salt, pepper, and a splash of lemon juice. Toss everything one last time and it's ready to serve.

# Notes:

01 - Cremini mushrooms give a stronger flavor, but any kind works fine
02 - Expect the spinach to shrink a lot while cooking
03 - Go for freshly minced garlic instead of pre-chopped—it tastes way better
