Rinse your mushrooms well and dry them off with a towel. Slice them into similar-sized pieces for even cooking. Wash and set aside your spinach. Mince the garlic while also squeezing some lemon juice to have it ready.

Place a large skillet on medium heat and pour in the olive oil to get it ready for the mushrooms.

Toss your sliced mushrooms into the skillet. Give them 5-7 minutes, stirring here and there. Let them turn golden and soft.

Once the mushrooms are nearly done, stir in the minced garlic. Let it cook for a short 1-2 minutes while stirring, so it releases its smell but doesn't burn.

Throw the fresh spinach into the skillet and mix it gently with the mushrooms and garlic. Season with salt, pepper, and a splash of lemon juice. Toss everything one last time and it's ready to serve.
