Elevate plain veggies and crackers into mouthwatering treats with this velvety smooth whipped feta dip. Sweet roasted garlic blends with tart Greek yogurt and briny feta to create deep flavor layers that'll keep everyone coming back for more.

I still remember the first time I brought this to a friend's house. People couldn't stop eating it and kept asking what was in it. They were shocked when I told them how simple it was. Now I always make extra because it vanishes so fast.

Key Components

  • Feta Cheese: Go for the stuff in brine tubs for maximum taste
  • Greek Yogurt: Don't skimp on fat content for the smoothest result
  • Fresh Garlic: A complete bulb gets wonderfully sweet when baked
  • Olive Oil: This is worth using your premium bottle
  • Fresh Lemon: Cuts through the richness with its zippy tang
  • Fresh Herbs: Pick ones that match your other dishes

We love this dip so much at our house that we planted herbs in our garden just for making it. My kid can't get enough of the version with fresh dill, but my partner likes it spicy with red pepper flakes mixed in.

I learned the best way to serve this from my neighbor who grew up in Greece. She showed me how to make little dips in the surface where olive oil can collect, so every scoop gets extra flavor.

Perfect Match-Ups

  • Fresh raw veggie sticks
  • Hot pita cut into triangles
  • Crackers with seeds
  • Fresh-cut baguette pieces
  • Thin cucumber slices

Serving Temperature Advice

  • Pull it out of the fridge half an hour early
  • Keep extra dip cold until needed
  • Add a splash of oil if it looks dry
  • Keep garnishes separate until serving
  • Enjoy when it's not cold from the fridge

Plan-Ahead Tips

  • Cook the garlic up to three days early
  • Mix the main dip the evening before
  • Save the fresh herbs to add right before guests arrive
  • Keep some hidden for refills
  • Make sure it's wrapped well in storage

It shows how basic ingredients can turn into something amazing with just a little care. The mix of creamy texture with tangy flavor and sweet garlic never disappoints and always leads to people asking for my secret.

Ingredients

→ Garlic for Roasting

01 One fresh garlic head
02 1 tbsp good-quality olive oil (extra virgin)

→ Creamy Blend

03 ¾ to 1 cup thick Greek yogurt (preferably whole or 2%)
04 4 oz feta cheese, crumbled
05 1 tbsp olive oil
06 1 tbsp fresh lemon juice (squeezed by hand)
07 Salt and black pepper (freshly ground, to your liking)

→ Tasty Toppings

08 A splash of olive oil (extra virgin)
09 1-2 tbsp chopped fresh herbs (like dill, parsley, or chives)
10 Small pinch of red chili flakes (if you want a kick)

Instructions

Step 01

Turn your oven on and set it to 400°F. Peel off most of the papery skin from the garlic head while keeping the skins of the individual cloves intact. Use a sharp knife to slice the top off (about ¼ inch) so the garlic cloves peek through.

Step 02

Put the trimmed garlic head on a piece of aluminum foil, drizzle the olive oil over it, and make sure it seeps inside. Wrap the foil loosely around it, set it on a small baking tray, and bake for about 40 minutes. The aroma should tell you it's done!

Step 03

Once the roasted garlic has cooled off a little, gently press the soft cloves into your food processor or blender. Add the Greek yogurt, feta, lemon juice, and olive oil to the blender with it.

Step 04

Blend it all together until everything is silky and smooth, pausing if needed to scrape the sides. Taste and sprinkle in some salt and pepper. Blend one last time, then move it to a serving bowl.

Step 05

Drizzle a little olive oil over the top, scatter the fresh herbs, and sprinkle on some red chili flakes if you like. It's great with crunchy veggies or warm pita bread for dipping.

Notes

  1. You can make this dip ahead and store it in a sealed container for up to 3 days.
  2. Use it as a sandwich spread, a side for roasted veggies, or even as a base for grain bowls.
  3. Roasted garlic keeps well if you store it in olive oil for about a week.
