Start with a non-stick skillet on medium heat, drop in butter, and let it fully melt until it glistens.

Carefully crack the eggs into your skillet, sprinkle with salt and pepper, and cook until whites are firm but those yolks are still soft. Gently set aside.

Lay one tortilla flat in the pan, sprinkle half your cheese over it evenly to create a cheesy base.

Place the eggs gently on top of the cheese, spread your avocado slices around, then cover it all with the remaining cheese.

Top with the second tortilla, cook for 2 minutes or so until it crisps, flip it carefully, and keep cooking until golden and all the cheese melts.
