Cut the eggplant into round slices about half an inch thick. Make little cuts in the center to hold extra sauce.

In a shallow dish, stir together the avocado oil, sugar, soy sauce, minced garlic, and chili oil if you'd like it spicy.

Lay eggplants on parchment in the air fryer. Spread some sauce on top, and cook at 350°F for 15 minutes. For crunch, broil for 2 extra minutes if desired.
