Garlic Soy Eggplant (Print Version)

# Ingredients:

→ Main

01 - 1 big eggplant

→ Sauce

02 - 2 tablespoons chopped garlic (about 3 cloves)
03 - 1 tablespoon chili oil (optional)
04 - 2 tablespoons light soy sauce
05 - 2 tablespoons avocado oil
06 - 2 tablespoons granulated sugar

# Instructions:

01 - Cut the eggplant into round slices about half an inch thick. Make little cuts in the center to hold extra sauce.
02 - In a shallow dish, stir together the avocado oil, sugar, soy sauce, minced garlic, and chili oil if you'd like it spicy.
03 - Lay eggplants on parchment in the air fryer. Spread some sauce on top, and cook at 350°F for 15 minutes. For crunch, broil for 2 extra minutes if desired.

# Notes:

01 - You can also bake at 375°F for around 30 minutes.
