Egg White Breakfast Bites (Print Version)

# Ingredients:

→ Protein Base

01 - 8 large egg whites, fresh
02 - ¼ cup of cottage cheese

→ Vegetables & Cheese

03 - ½ cup chopped fresh spinach
04 - ¼ cup diced red bell pepper, finely chopped
05 - ¼ cup shredded cheddar cheese, optional

→ Seasonings

06 - A sprinkle of garlic powder (about ¼ teaspoon)
07 - Salt and pepper, add as much or little as you like
08 - Spray for nonstick cooking

# Instructions:

01 - Set your oven to 350°F (175°C). Coat muffin tins lightly with nonstick spray.
02 - Blend the egg whites, cottage cheese, and all seasoning ingredients. Keep going until it's frothy and smooth.
03 - Evenly pour the blended mixture into muffin cups, making sure to fill only 2/3 of the way up.
04 - Drop in spinach, diced red pepper, and cheese (if you're using it) so every cup gets some.
05 - Pop it in the oven for 18 to 20 minutes. They're done when the edges look golden and the tops are firm.

01 - Great for prepping meals ahead of time.
02 - Switch it up by tossing in other veggies or fresh herbs.
03 - Store in the fridge and eat within 4 days.
04 - You can freeze them to keep them fresh longer.
