Turn on the oven to 350°F. Coat an 8-inch round or springform pan with cooking spray, so nothing sticks later.

Scatter raw almonds on a small tray, bake for five minutes, and keep an eye on them. Once they're toasted and golden, take them out and cool.

In a medium bowl, mix salt, baking powder, and almond flour thoroughly until everything's combined.

Whisk together the eggs, maple syrup, oil, and extracts (vanilla and almond) in a large bowl until smooth.

Pour the dry stuff into the bowl with the wet ingredients. Mix it up till you don't see any lumps.

Pour the batter into your greased pan. Evenly sprinkle the cooled toasted almonds over the top.

Bake for 20-25 minutes. It's ready when the top looks golden and a toothpick comes out clean.
