Heat your oven to 400°F (200°C).

Boil or steam cauliflower florets till tender, about 5-7 minutes. Drain them and let cool.

Once the cauliflower has cooled, mash it up. Then stir together with egg, seasonings, and cottage cheese.

Slowly mix breadcrumbs in until it's firm enough to shape. Roll into evenly sized tots.

Line a baking sheet with parchment, place tots on it, and bake 20-25 minutes till crisp and golden.

Allow them to cool for a bit before digging in.
