Crispy Cheese Bites (Print Version)

# Ingredients:

→ Base

01 - 1 cup cottage cheese, plain
02 - 1 head of cauliflower
03 - ½ cup breadcrumbs

→ Cheese & Aromatics

04 - ¼ cup scallions, finely chopped
05 - ½ cup parmesan, shredded

→ Seasonings

06 - ½ tsp garlic powder
07 - ½ tsp onion powder
08 - ¼ tsp black pepper
09 - ½ tsp salt

→ Binding

10 - 1 egg

# Instructions:

01 - Heat your oven to 400°F (200°C).
02 - Boil or steam cauliflower florets till tender, about 5-7 minutes. Drain them and let cool.
03 - Once the cauliflower has cooled, mash it up. Then stir together with egg, seasonings, and cottage cheese.
04 - Slowly mix breadcrumbs in until it's firm enough to shape. Roll into evenly sized tots.
05 - Line a baking sheet with parchment, place tots on it, and bake 20-25 minutes till crisp and golden.
06 - Allow them to cool for a bit before digging in.

01 - Tasty, lighter swap for regular tater tots.

03 - Keep tots the same size to cook evenly.
04 - Mix shouldn't be too wet, or they'll fall apart.
