Tomato Herb Fritters (Print Version)

# Ingredients:

→ Fresh Produce

01 - 2 big tomatoes, chopped small (around 250g)
02 - Half a red onion, chopped fine
03 - 2 big garlic cloves, crushed

→ Fresh Herbs & Seasonings

04 - Leaves from half a bunch of dill (about 10g), chopped fine
05 - Half a bunch of parsley (roughly 15g), chopped
06 - Grated peel from one lemon
07 - Half a teaspoon of salt (or more if needed)
08 - Black pepper (add as much as you like)

→ Dry Ingredients

09 - 85g regular flour
10 - Half a teaspoon of baking powder

# Instructions:

01 - Chop up your tomatoes into tiny pieces and put them in a big bowl. This will be the starting point for your batter.
02 - Mix the tomatoes with your diced onions, crushed garlic, grated lemon peel, and chopped herbs. Toss in the flour, baking powder, salt, and pepper. Stir well until it turns into a thick mix.
03 - Pour enough olive oil to cover the bottom of your pan and heat it over medium. Drop big spoonfuls of the mix onto the pan and let each side turn golden brown before flipping.

01 - Great trick to use up ripe tomatoes during summer.
02 - Best enjoyed fresh while they're hot and crisp.
03 - Works wonderfully as a side or a light snack.
