Take your cold mac and cheese and scoop it into your hands. Roll them into portions about the size of a golf ball. The chill makes shaping easier and less sticky.

Set up a lineup of three shallow bowls: one with flour, another mixing your eggs and milk, and a third holding the breadcrumbs. That’s your breading zone!

Roll each mac and cheese ball in flour lightly, then dip it into the egg and milk mix. Finally, coat it thoroughly with breadcrumbs. Make sure every piece gets a good, even coating.

Heat your oil to 350°F (175°C). Gently place the breaded balls in the hot oil, a few at a time. Fry for 3 to 4 minutes until crispy and golden. Remember not to pack the pan too full!

Put the fried balls on paper towels so the extra oil can drip off. Sprinkle salt and pepper while they’re hot. Serve them straight away for the best crunch!
