Crispy Mac Cheese Balls (Print Version)

# Ingredients:

→ Base

01 - 2 cups grated cheddar cheese, freshly shredded
02 - 2 cups chilled leftover macaroni and cheese

→ Breading Station

03 - 1/4 cup milk
04 - 2 eggs, beaten
05 - 1 cup plain all-purpose flour
06 - 2 cups crunchy bread crumbs

→ Frying & Seasoning

07 - Cooking oil for deep frying
08 - A dash of salt with a bit of freshly cracked black pepper to taste

# Instructions:

01 - Take your cold mac and cheese and scoop it into your hands. Roll them into portions about the size of a golf ball. The chill makes shaping easier and less sticky.
02 - Set up a lineup of three shallow bowls: one with flour, another mixing your eggs and milk, and a third holding the breadcrumbs. That’s your breading zone!
03 - Roll each mac and cheese ball in flour lightly, then dip it into the egg and milk mix. Finally, coat it thoroughly with breadcrumbs. Make sure every piece gets a good, even coating.
04 - Heat your oil to 350°F (175°C). Gently place the breaded balls in the hot oil, a few at a time. Fry for 3 to 4 minutes until crispy and golden. Remember not to pack the pan too full!
05 - Put the fried balls on paper towels so the extra oil can drip off. Sprinkle salt and pepper while they’re hot. Serve them straight away for the best crunch!

01 - Chilled mac and cheese is easier to roll and keeps its shape nicely.
02 - You can assemble these ahead of time and freeze them before frying.
