Crispy Eggplant Bites (Print Version)

# Ingredients:

01 - 2 tablespoons of avocado oil
02 - 1 big eggplant, peeled and chopped into big chunks

→ Seasonings

03 - 1/4 teaspoon kosher salt (and a bit more for salting)
04 - 1 teaspoon of thyme, dried
05 - 1/2 teaspoon of garlic powder
06 - 1/2 teaspoon smoked paprika
07 - 1 teaspoon dried rosemary

# Instructions:

01 - Let the chopped eggplant sit with salt for 15 to 30 minutes. Then blot the pieces dry with paper towels.
02 - Combine the eggplant chunks with avocado oil and seasonings, making sure every piece is covered.
03 - Set air fryer to 400°F and cook for about 18 minutes. Pause halfway to toss the pieces so they brown evenly.
