Cookie Brownie Bars (Print Version)

# Ingredients:

01 - 113g unsalted butter (8 tbsp), for the cookies.
02 - 200g white sugar (1 cup).
03 - 24g cocoa powder, Dutch-processed (1/4 cup).
04 - 50g white sugar (1/4 cup).
05 - 1/2 teaspoon baking powder.
06 - 2 eggs, large.
07 - 80g plain all-purpose flour (2/3 cup).
08 - 130g semi-sweet chocolate (3/4 cup).
09 - 1/4 teaspoon baking soda.
10 - 1/2 teaspoon salt.
11 - 113g unsalted butter (8 tbsp).
12 - 180g chocolate chips, semi-sweet (1 cup).
13 - 1 egg, at room temperature.
14 - 160g plain flour (1 1/3 cup).
15 - 1/2 teaspoon vanilla extract.
16 - 100g dark brown sugar (1/2 cup).

# Instructions:

01 - Melt butter in a saucepan on medium heat until you see amber with browned dots. Pour into a container, saving 90g.
02 - Set the oven to 350°F/175°C. Take an 8-inch square pan and line it with parchment paper, greasing it lightly.
03 - Mix the chocolate with the butter until smooth. Stir in the cocoa powder. Whisk together beaten eggs and sugar in a separate bowl till it starts to foam, then blend into the chocolate mixture. Finally, fold in salt and flour gently.
04 - Blend the sugars with the browned butter. Beat in the egg and vanilla. Gently fold in the dry ingredients and chocolate pieces just until it holds together.
05 - Spread half the brownie batter in the pan, press in 2/3 of the cookie dough in flattened pieces, layer on the rest of the brownie, and sprinkle over the leftover cookie dough. Let it bake for 40-45 minutes until edges firm up.

01 - Center should jiggle a little when ready.
02 - Cool fully before you cut or eat.
03 - Using an oven thermometer can help accuracy.
