Cilbir Turkish Eggs (Print Version)

# Ingredients:

→ Base

01 - 2 eggs
02 - 1-2 minced garlic cloves
03 - 1 cup whole milk Greek yogurt, at room temperature
04 - Optional: 1-2 tablespoons vinegar

→ Spiced Oil

05 - 2 teaspoons red chili flakes or Aleppo pepper
06 - 3 tablespoons good quality olive oil

# Instructions:

01 - Stir yogurt, garlic, and a little kosher salt until smooth, then split between two bowls.
02 - Boil water in a medium pot. Toss in vinegar if you'd like to add it.
03 - Use a fine sieve to separate excess egg white. Once done, move it to a small bowl.
04 - Make a whirlpool in the boiling water using a spoon. Slip the egg in and cook for 2-3 minutes. Lift it out with a slotted spoon and set it on parchment. Repeat for the other egg.
05 - In a small pan, gently heat olive oil with chili flakes over medium heat.
06 - Top the yogurt in the bowls with eggs and pour spicy oil over it. Serve with crusty bread while warm.
