# Ingredients:

→ Meat and Veggies

01 - 1 pound of chicken (breast or thighs), cut into thin strips
02 - 2 tablespoons of olive oil, preferably high-quality
03 - 1 onion, sliced into thin pieces
04 - 1 bell pepper, any color, sliced thinly
05 - 2 garlic cloves, minced finely
06 - 1 teaspoon of smoky paprika
07 - 1/2 teaspoon of fine sea salt
08 - 1/2 teaspoon of coarsely ground black pepper
09 - 1/2 teaspoon of dried oregano for a herby kick
10 - 1/2 teaspoon of dried thyme for extra aroma
11 - 1 tablespoon of soy sauce (optional, for a deeper flavor)

→ Building the Sandwiches

12 - 4 hoagie rolls or sub rolls, fresh and soft
13 - 4 slices of cheese (provolone or American, your pick)
14 - Choose your add-ons: some cooked mushrooms, tangy pickled jalapeños, or a few extra caramelized onions and peppers

# Instructions:

01 - Warm up a large pan on medium-high heat, then pour in the olive oil until it glistens.
02 - Throw in your chicken slices and cook them, stirring here and there, until they’re golden and cooked through, about 5-7 minutes.
03 - Add the onion and pepper slices to the pan, letting them soften and slightly caramelize as they cook for about 5 minutes.
04 - Mix in the garlic and all the seasonings—paprika, salt, pepper, oregano, and thyme—and cook together until the garlic smells amazing (1-2 minutes).
05 - If you like, pour in the soy sauce and mix everything up for extra umami flavor.
06 - While the skillet’s doing its thing, toast those rolls lightly so they’re just golden enough.
07 - Place a cheese slice on the bottom half of each roll to let it melt perfectly.
08 - Pile the cooked chicken and veggie mix into the rolls, packing them generously.
09 - Slide the filled rolls under the broiler for a bit, just long enough for the cheese to melt and bubble slightly.
10 - Add your extras, like mushrooms or jalapeños, for more flavor and texture.

# Notes:
