Chicken Avocado Melt (Print Version)

# Ingredients:

→ Main

01 - 4 slices cheese (cheddar, provolone, or Swiss)
02 - Salt and pepper, as much as needed
03 - 1 avocado, cut into slices
04 - 2 chicken breasts, skinless and boneless
05 - 1 spoonful of olive oil

→ Bread & Spreads

06 - 2 spoons of Dijon mustard
07 - 4 thick bread slices (choose sourdough or ciabatta)
08 - Butter or olive oil for cooking
09 - 2 spoons of mayo

→ Vegetables

10 - 1 tomato, sliced into rounds
11 - 1 small red onion, sliced thin

# Instructions:

01 - Rub chicken with salt and pepper. Pan-fry in heated oil for about 6–7 minutes each side till it's cooked through. Let it rest for a bit, then cut into strips.
02 - Get everything ready—slice the avocado, and prepare the cheese, onion, and tomato.
03 - Cover bread slices with mayo and mustard. Pile on the chicken strips, avocado, cheese slices, onion, and tomato.
04 - Heat a bit of butter or oil in a pan and grill each sandwich till the bread turns golden and the cheese melts, about 3–4 minutes per side.

01 - Keep leftovers fresh in a container with a good lid.
02 - Warm them in the oven to keep the texture crisp.
