Grab a bowl and toss in the cottage cheese and self-rising flour. Mix it all together with a spoon or spatula until it turns into a sticky, soft dough. Too sticky? Sprinkle in a little extra flour, one tablespoon at a time, till it's easier to work with.

Dust a clean counter with a bit of flour and place the dough on it. Split it into 4 similar portions. Use your hands or a rolling pin to gently flatten each part into a round or oval that's about 1/4-inch thick.

Heat up a non-stick skillet or griddle on medium. Once it’s hot, place each flatbread on it and cook for 2-3 minutes on each side. They’re ready when golden spots start to show, and they’re cooked through.

Eat the flatbreads while they're warm. Leave them plain, or add something tasty like avocado, smoked salmon, hummus, or a drizzle of honey.
