01 - 1 cup self-rising flour
02 - 1 cup cottage cheese

# Instructions:

01 - Grab a bowl and toss in the cottage cheese and self-rising flour. Mix it all together with a spoon or spatula until it turns into a sticky, soft dough. Too sticky? Sprinkle in a little extra flour, one tablespoon at a time, till it's easier to work with.
02 - Dust a clean counter with a bit of flour and place the dough on it. Split it into 4 similar portions. Use your hands or a rolling pin to gently flatten each part into a round or oval that's about 1/4-inch thick.
03 - Heat up a non-stick skillet or griddle on medium. Once it’s hot, place each flatbread on it and cook for 2-3 minutes on each side. They’re ready when golden spots start to show, and they’re cooked through.
04 - Eat the flatbreads while they're warm. Leave them plain, or add something tasty like avocado, smoked salmon, hummus, or a drizzle of honey.

# Notes:

01 - For a quick self-rising flour swap, mix 1 cup all-purpose flour with 1 1/2 teaspoons of baking powder and 1/4 teaspoon of salt.
02 - Change the flatbread thickness if you like—it’s up to you.
