Lay out what you need so you're all set to start.

Heat your pan on medium-high, then add the oil.

Cut a small slit in each bologna slice, from the middle to the edge, so it cooks flat.

Pop your bologna into the hot pan and fry it until both sides are nicely browned.

As the second side cooks, top the slice with cheese so it gets gooey.

Evenly coat both bread slices with a layer of mustard.
