Peas & Collard Greens (Print Version)

# Ingredients:

01 - 3/4 cup wild rice
02 - 2 - 3 cups chopped collard greens
03 - 16 ounces dried black-eyed peas
04 - 1 large ham bone with some meat

→ Aromatics & Liquids

05 - 1 tablespoon apple cider vinegar
06 - 8 ounces tomato sauce
07 - 64 ounces chicken stock
08 - 3 cloves garlic, finely chopped
09 - 1/2 large sweet onion, chopped

→ Seasonings

10 - 2 teaspoons onion powder
11 - 1 teaspoon salt or Creole seasoning
12 - 1/2 teaspoon black pepper
13 - 2 teaspoons garlic powder
14 - 1/2 teaspoon cayenne pepper

# Instructions:

01 - Rinse the black-eyed peas under running water in a big strainer. Check for broken beans, weird colors, or any debris and toss them out.
02 - Place the ham bone in the slow cooker. Toss in the onion, diced garlic, chicken stock, spices, vinegar, and tomato sauce. Give it a little mix, then add the black-eyed peas and collard greens.
03 - Cover the slow cooker and set it to High. Let it cook for 2 hours, then stir in the wild rice.
04 - Pop the lid back on and switch the slow cooker to Low. Let it simmer for another 4 hours.
05 - Carefully take the ham bone out. Trim off any meat left on it and toss the meat back into the pot. Stir everything, then cook it for another 30-60 minutes on Low. Before serving, skim off the ham fat floating on top.
