Crispy Beef Tacos (Print Version)

# Ingredients:

01 - 1 lb of ground beef, 85-90% lean.
02 - 2 tbsp of taco seasoning mix.
03 - Half a cup of water.
04 - 3 minced garlic cloves.
05 - Juice from a single lime.
06 - 4 oz of diced green chili peppers.
07 - 8 oz of shredded colby jack cheese.
08 - 8 to 10 corn tortillas.
09 - Half to three-quarters of a cup of Mexican-style crema.
10 - 2 chipotle chilies in adobo sauce.
11 - 1 tsp of honey.
12 - 1 clove of garlic.
13 - Half a lime’s worth of juice.
14 - Oil for brushing.

# Instructions:

01 - Turn on the oven to 425°F. Brush oil on two baking trays. Brown the beef till there’s no pink left, then drain the fat.
02 - Mix beef with the taco mix, water, garlic, lime, and green chilies. Let the liquid cook off, then stir in a cup of cheese.
03 - Heat up the tortillas. Add beef and some cheese to one half, then fold it up. Coat the outside with a little oil.
04 - Put in the oven for 15-20 minutes until they’re golden and crisp.
05 - Blend the crema ingredients until smooth. Dip the tacos or spoon some on top!

# Notes:

01 - Don’t overstuff the tacos, or they’ll break.
02 - Store in the fridge for up to 3 days.
