Crispy Air Fryer Zucchini (Print Version)

# Ingredients:

→ Main Ingredients

01 - 3 medium-sized zucchini

→ Coating

02 - 1/2 cup all-purpose flour
03 - 1 cup breadcrumbs (Italian or panko style)
04 - 1/3 cup parmesan cheese, grated
05 - 2 large eggs

→ Seasonings

06 - 1 tablespoon Italian herb blend
07 - 1 teaspoon ground black pepper
08 - 1 teaspoon fine salt

→ Other

09 - 2 tablespoons oil spray (for cooking)

# Instructions:

01 - In one bowl, stir together the flour and spices. Crack and whisk eggs in another dish. In the third, toss breadcrumbs and parmesan together.
02 - Slice the zucchini into sticks about 3 inches long. Dip each piece in the flour mix, then egg, finishing with the breadcrumbs.
03 - Lightly coat the air fryer basket with oil. Line up the zucchini strips without overlapping, spray some oil on top, then air fry at 400°F for 9 minutes or until they're golden-brown.
